How does kinetic energy affect the stopping distance of a vehicle traveling at 30 mph compared to the same vehicle traveling at 60 mph?

Since kinetic energy scales to the power of two with velocity, KK~ v2v2, the kinetic energy of a car moving twice as fast is four times as great. Since it has four times the energy it takes four times the distance to stop, assuming the power of the tires is roughly constant for all velocities.
