Mainland China refers to all of China except Hong Kong, Maraco, and Taiwan.

This is a political term, not a geographical one. The majority of Hong Kong is actually attached to the mainland in geographical terms but is considered separately politically. 

Some islands are considered part of the mainland for example Hainan.
